These bites are gluten free and vegan ! I used vegan and sugar free chocolate for this recipe.
You can use any chocolate of your choice. This is my daughter’s favorite lunch dessert.
- 3/4 cup Raspberry
- 1/2 cup Chocolates Chips
- 1/4 cup Pistachio
- Dry Coconut (shredded) – used for sprinkling
Mash the raspberries in a bowl. Then melt the chocolate chips in the microwave (it will only take 50 seconds for chocolate to melt). Mix the melted chocolate together with raspberries. Then add pistachios to the mixture.
Place the parchment paper on a baking tray and scoop the mixture onto the parchment paper using 1 table spoon for every scoop. Put the tray in the refrigerator for 1 hour so that the bites become firm.
That’s it – now you can enjoy the bites with coffee or any drink of your choice.
These bites can be stored in the refrigerator for 5 days and stored in the freezer for 1 month.
