These oatmeal cups are so popular in my family ! I make them on weekends for breakfast. If you are on a plant-based diet you can use coconut yogurt instead of Greek yogurt.
- 1 cup Rolled Oats
- 1/2 cup Mashed Banana (you can substitute applesauce or yogurt if desired)
- 1 Tbsp Honey
- 6 tsp Greek Yogurt
- 1/8 tsp Vanilla Extract
- 1/4 tsp Cinnamon Powder
- Toppings / Garnish (blueberries, raspberries, mint, etc)
Mix all the ingredients together in one bowl. The mixture will become somewhat dough-like after it is mixed. Scoop the oatmeal mixture into your muffin tray and press down all sides until all sides are flat. 1 cup of oatmeal can make six oatmeal cups.
Place the muffin tray with oatmeal cups in the oven for 15 mins at 350 degrees. Remove the muffin tray from the oven and allow to cool. Fill each cup with 1 spoon of the yogurt of your choice. Top with fruit such as blueberries, strawberries, raspberries and even mint.
