Lemon Zest Cookies

  • 1 cup Gluten Free Baking Flour
  • 1 Tbsp Lemon Zest
  • 1 tsp Lemon Extract
  • 1/3 cup Oil room temperature
  • 1 Tbsp Chia Seed soaked
  • 1/2 cup Coconut Sugar
  • 1 tsp Baking Powder
  • 2 Tbsp Dairy Free Milk if needed


  • Put all the gluten free flour into one bowl
  • Then add lemon zest, lemon extract, coconut oil, soaked chia seeds, and baking powder. Mix everything together in the bowl
  • If the dough is not sticky enough, then add up to 2 tablespoons of dairy free milk and mix again to make it a nice sticky dough
  • Cover the bowl with a lid and put it in the fridge for 5 minutes
  • Layer some parchment paper onto a baking sheet
  • Scoop 1 Tbsp of cookie dough at a time onto the baking sheet until all the dough has been used
  • Press each scoop of cookie dough down into a flat, round cookie shape (see picture)
  • Preheat the oven on 350F degrees
  • Place the cookies into the oven and bake for 15 minutes.
  • It may take up to 20 minutes to cook depending on your oven, so keep an eye on the cookies
  • After 15-20 minutes, check under one of the cookies to see if it has turned light brown. If so, the cookies are ready
  • Take the cookies out of the oven and let them cool down completely
  • Your crispy, crunchy cookies are ready to enjoy



You can store these cookies in a jar at room temperature for 3 days and in a sealed bag in the fridge for 2 weeks.
