Lemon Zest


Lemon Zest Cookies
Vegan Lemon Zest Flavored Cookies
Ingredients
- 1 cup Gluten Free Baking Flour
- 1 Tbsp Lemon Zest
- 1 tsp Lemon Extract
- 1/3 cup Oil room temperature
- 1 Tbsp Chia Seed soaked
- 1/2 cup Coconut Sugar
- 1 tsp Baking Powder
- 2 Tbsp Dairy Free Milk if needed
Instructions
- Put all the gluten free flour into one bowl
- Then add lemon zest, lemon extract, coconut oil, soaked chia seeds, and baking powder. Mix everything together in the bowl
- If the dough is not sticky enough, then add up to 2 tablespoons of dairy free milk and mix again to make it a nice sticky dough
- Cover the bowl with a lid and put it in the fridge for 5 minutes
- Layer some parchment paper onto a baking sheet
- Scoop 1 Tbsp of cookie dough at a time onto the baking sheet until all the dough has been used
- Press each scoop of cookie dough down into a flat, round cookie shape (see picture)
- Preheat the oven on 350F degrees
- Place the cookies into the oven and bake for 15 minutes.
- It may take up to 20 minutes to cook depending on your oven, so keep an eye on the cookies
- After 15-20 minutes, check under one of the cookies to see if it has turned light brown. If so, the cookies are ready
- Take the cookies out of the oven and let them cool down completely
- Your crispy, crunchy cookies are ready to enjoy
