Chai Tea Cupcakes

Ingredients

Chai Masala Ingredients

  • Equal portions of:
    • Cinnamon
    • Nutmeg
    • Green Cardamom
    • Black Cardamom
    • Black Pepper
    • Cloves

Muffin Ingredients

  • 1 1/2 cup Almond Flour
  • 1/4 cup + 1 Tbsp Coconut Sugar
  • 1 tsp Chai Masala (made from equal portions of Cinnamon Powder, Nutmeg, Green Cardamom Powder, Black Cardamom Powder, Black Pepper Powder, Cloves)
  • 1 Egg
  • 1/4 cup Almond Milk (or you can use Dairy milk instead)
  • 1 tsp Coconut Oil (or you can use Ghee instead)
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • Pinch of Salt

Frosting Ingredients

  • 5 Tbsp Unsalted Butter
  • 1/4 cup Coconut *Sugar
    • I use less sugar in my recipes, but you can adjust according to your taste
  • 1 tsp Vanilla Extract

Recipe

Chai Masala Preparation

Grind equal portions of Cinnamon, Nutmeg, Green Cardamom, Black Cardamom, Black Pepper, and Cloves into a fine powder in a coffee / spice grinder. This recipe calls for only 1 tsp of the resulting Chai Masala powder mixture.

You can alternatively get prepared Chai Masala from the store – but if you make it at home you will have lots of fresh Chai Masala left over for future use.

Muffin Preparation

  1. In one bowl, mix the almond flour, coconut sugar, chai masala, baking soda, baking powder and coconut oil / ghee, milk and salt together to form a consistency that is in between runny and dough-like. Please see the picture for more details.
  2. Then pour the mixture into a muffin baking tray. You can make 6 large muffins out of this recipe.
  3. Preheat the oven on 350 degrees. Place the baking tray in the oven and cook for 15 minutes.
  4. Take the muffins out of the oven and let them cool down.

Frosting Preparation

  1. Mix all the ingredients together in a bowl with an electric whisk until the mixture is fluffy.
  2. Place the mixture into the fridge for 3 hours.
  3. Then take the frosting out of the fridge and keep it at room temperature for 5 minutes.
  4. Put the frosting into a piping bag with a tip.
  5. Now it’s time to decorate the muffins ! Start decorating the muffins with the frosting from the piping bag by making the look and decoration of your choice.
  6. Sprinkle some cardamom powder on top for garnish.

Your Chai Tea Masala cupcakes are ready to enjoy !

Storage

The cupcakes can be stored for 3 days in the fridge.
